Chinese New Year with Nudo's James Lau

We caught up with Nudo owner James Lau to find out how he's celebrating the Year of the Tiger! 

What's your favourite aspect about Newcastle's Chinese New Year celebrations?

My favourite aspect about Chinese New Year is the people of Newcastle coming together to celebrate by taking part in the culture. It’s lovely to see people celebrating and welcoming a lucky and prosperous year to each other whilst indulging in fantastic food!

Which animal year were you born in? What qualities are associated with that particular year?

I was born in the year of the Pig. They say that those born in the year of the pig are flexible, gentle and optimistic. 

What are your hopes for the Year of the Tiger?

It has been a bumpy ride over the last couple of years for many. I am hoping that the road ahead is clear and bright.

How did Nudo Sushi come to fruition?

The name “Nudo” came about as it was the way my grandmother called “Noodles” in broken English. Before they prepared noodles to eat, she would tease and shout, “Kallun [my Mother (in Broken English)] your nudo is ready!”

Nudo Sushi Box was first created in 2013, 4 years after Nudo Noodle House opened. Our team figured that there were not many options (at the time) when it came to sushi in Newcastle, and it can sometimes be hard to find good quality on the go; our aim is to make sushi a regular, healthy treat as opposed to an occasional luxury. To achieve this, we offer distinctive, unique and beautifully prepared foods at affordable prices.

How has Newcastle shaped your life/your cuisine?

I was born and bred in Newcastle, and I find myself and others very lucky to live in a city that has a Chinatown in the UK. There are so many opportunities to experience different tastes from all over the world, including enjoying delicious Dim Sum on a Sunday, where many of the Chinese may meet for a social occasion.

What are some of your favourite dishes on the menu?

One of my favourite dishes at Nudo Sushi Box is the "LON01" Seared Salmon Nigiri. I remember the first time searing the salmon nigiri with the blowtorch, and seeing the maillard reaction occur as the fat & eel sauce starts to sizzle and the fish begins to darken.

Does Nudo Sushi Box have any special dishes up their sleeves for the festivities?

Nudo Sushi Box has recently launched a range of Vegan-Chicken sushi and hot dishes. The Vegan-Chicken is made from a soy protein that has a texture similar to meat. This range is just the beginning, with more to come.

Shoutout to other Asian businesses in the city?

Sky (Chinatown, Stowell St) - Delicious Dim Sum! They closed down due to Covid, but have recently reopened with new owners and a new team.

Infusion 2018 (Strawberry Place). One of my favourite restaurants in all of Newcastle. They serve proper and authentic China-style cuisine with big plates. I would recommend dining with 4 to 10 guests as it means everyone has a chance of sharing and tasting more dishes!
